This "Tsubame-Sanjo-style ramen" is made with thick non-fried noodles and a soy sauce-flavored soup with plenty of back fat from a combination of pork bone and niboshi broth. The noodles are now extra-thick and more satisfying, and the onion is chopped into large pieces.
