Kimaru Shoyu 160ml - Japanese All-Purpose Soy Sauce Seasoning
Kimaru Shoyu is a Japanese all-purpose seasoning sauce made in Japan that balances soy sauce, sake, mirin and sugar in one bottle, so teriyaki, gyudon, nikujaga and other Japanese home dishes come out right without measuring. This 160ml bottle is the ideal first-try size.
Why One Bottle Replaces Four Seasonings
In Japanese cooking the flavor of each dish is adjusted little by little - a little more soy sauce here, a touch of mirin there. That balance is difficult even for Japanese cooks, and measuring several seasonings on a busy day is a chore. Kimaru Shoyu is neither simply sweet nor simply salty, but layered with the depth of umami Japanese cuisine is known for.
Seasonal Japanese Ingredients Infused in the Sauce
Beyond soy sauce, sake, mirin and sugar, apples, lemons, onions and ginger are slowly infused into the sauce - all in season in Japan from autumn into winter, when their aroma and sweetness are fullest.
- Fuji apples grown with reduced pesticides, known in Japan for their balance of sweetness, acidity and aroma
- Reduced-pesticide lemons from Kumamoto and Ehime, softer in aroma than sharply acidic imported lemons, lightening the aftertaste
- Reduced-pesticide Awaji Island onions, famous in Japan for sweetness and umami, adding gentle richness when heated
- Pesticide-free ginger from the Shimanto River basin, Kochi, aromatic with a refreshing sharpness that tightens the flavor
Plant-Based and Additive-Conscious
Unlike typical mentsuyu noodle bases built on bonito and other seafood stock, Kimaru Shoyu uses no animal-derived ingredients, so the flavor balance stays comparatively stable after opening - enjoyable to the last drop. It contains no preservatives, artificial colors, artificial flavors or MSG, and is produced in Japan with Japanese ingredients.
How to Use Kimaru Shoyu
- Everyday Japanese dishes: teriyaki, yakitori, sukiyaki, ginger pork, yakiniku, stir-fries, nikujaga, oyakodon, gyudon, nikudofu, kinpira
- Marinate and grill (tsuke-yaki): add grated garlic and sesame oil, rub into meat and marinate overnight for Japanese-style yakiniku
- Fish: lemon is already infused, so marinating fish gives the citrus-and-soy character of yuan-yaki, a refined grilled fish dish usually reserved for Japanese restaurants
- Vegetables and tofu: a dip for steamed or grilled vegetables, or poured over chilled tofu with grated ginger
- Beyond washoku: grills, roasted vegetables, sauces and dressings, or combined with hot sauce, spices, garlic or sesame oil
Washoku was registered as a UNESCO Intangible Cultural Heritage in 2013 - not only tempura, sushi and sashimi, but Japanese food culture including everyday home cooking. Kimaru Shoyu brings that taste to your table, even without special cooking skills.
