Just as high-quality ingredients are used in delicious cooking, we also use top-notch materials in our kimchi. Every day, we go to the Ota Market to purchase our ingredients, changing the source based on the season. From the beginning of winter to early spring, we use large, yellow-hearted Napa Cabbage from Ibaraki and Gunma, which has been frosted. Summer is not the peak season for Napa Cabbage, making it the most difficult time for ingredient selection. For the past several decades, we have been relying on a producer from Sakuho, Nagano. We visit the producer to ask the artisan, Shiroto, what kind of Napa Cabbage we need, and he cultivates it for us.
2. Carefully Selected Red Pepper
Red pepper is the most crucial ingredient in making kimchi. The artisan, Shiroto, selects peppers that have a solid spiciness with a hint of sweetness, and a dark red color. He uses a generous amount of red pepper and blends it with dozens of other ingredients, including garlic, squid salt, and fruits, to create the perfect recipe.

We promote fair pricing (reasonable prices) with our producers and manufacturers. By doing so, we believe that everyone benefits if good products are purchased at fair prices and our customers are happy with their purchases.
4. Artisans Hand-Making Every Day
Experienced artisans cut, salt-pickle, and soak the finest ingredients collected from the Ota Market and direct from the source every day. Of course, we also implement HACCP hygiene management, and our raw materials are temperature-controlled and quality-checked from the time of purchase to shipment through our own inspections.
