Descripción

Kimaru Shoyu is an all-in-one Japanese seasoning sauce made in Japan, blending soy sauce, sake, mirin and sugar in one 310ml bottle so you can cook teriyaki, yakitori, sukiyaki and other washoku dishes without measuring several seasonings.

Why This Japanese Soy Sauce Blend Works

In Japanese home cooking the taste of each dish is adjusted little by little with soy sauce, mirin and sugar, a balance that is difficult even for Japanese cooks. Kimaru Shoyu is neither simply sweet nor simply salty: sweetness, saltiness, acidity and aroma are layered into the deep umami characteristic of Japanese cuisine.

Seasonal Japanese Ingredients

Beyond soy sauce, sake, mirin and sugar, apple, lemon, onion and ginger are slowly infused into the sauce. All come into season in Japan from autumn to winter, when they hold the most aroma, sweetness and umami.

  • Fuji apple grown with reduced pesticides and prepared at peak season, a variety known in Japan for its balance of sweetness, acidity and aroma.
  • Lemon from Kumamoto and Ehime prefectures, grown with reduced pesticides. Japanese lemons are gentler than strongly acidic ones, tightening the flavour and lightening the aftertaste.
  • Onion grown with reduced pesticides on Awaji Island, famous in Japan for sweet, aromatic onions that give a gentle richness when heated.
  • Ginger grown pesticide-free in the Shimanto River basin of Kochi Prefecture, highly aromatic with a refreshing sharpness.

Rather than being mass produced year round, it is prepared while checking the aroma and condition of the ingredients.

Plant-Based and Free From Additives

Unlike mentsuyu noodle bases built on seafood dashi, whose flavour changes easily once opened, Kimaru Shoyu uses no animal-derived ingredients, so the balance stays stable to the last drop. No preservatives, artificial colours, artificial flavours or MSG (amino acids, etc.). Produced in Japan with Japanese ingredients.

How to Use This Japanese Seasoning Sauce

Use it on its own for teriyaki, yakitori, sukiyaki, ginger pork, yakiniku, stir-fries, simmered dishes, nikujaga, oyakodon, gyudon, nikudofu and kinpira. Add grated garlic and sesame oil, rub into meat and marinate overnight for Japanese tsuke-yaki grilled meat. Because lemon is already infused, marinating fish gives the citrus character of yuan-yaki, a refined grilled fish dish usually made in restaurants. It is also a fine dip for steamed or grilled vegetables, or poured over chilled tofu with grated ginger.

Not Only for Japanese Food

It also suits grills, roasted vegetables, sauces and dressings, and pairs well with hot sauce, spices, garlic and sesame oil. Washoku became a UNESCO Intangible Cultural Heritage in 2013, not only for sushi and tempura but for everyday Japanese home cooking, and this bottle makes that taste easy.
